Both Japan and Italy are my irreplaceable homelands. The sensibilities these countries nurture are the very foundation of my cooking.

This summer through autumn, as Japan and Italy celebrate the 160th anniversary of their diplomatic relations, Hotel Chinzanso Tokyo will be steeped in the stories of both nations.

From a commemorative course at Il Teatro and a celebration of Japanese cuisine paired with Italian wines, to Italian confections at the bar and lounge, and even a special suite stay to mark the occasion, an array of experiences await.

Autumn Harmony – Celebrating 160 Years of Japan–Italy Diplomatic Relations

To mark this historic anniversary, we have prepared a special dinner course.
The experience begins with an appetizer evoking the colors of the Italian flag. Rice flour ravioli is paired with Castelfranco, a vegetable that symbolizes the Italian autumn, while a risotto of barley and sake lees is finished with sage oil and a cardamom espuma. Every dish beautifully expresses a fusion of Japan and Italy. Seasonal touches also abound, including a fish course inspired by the traditional Japanese moon-viewing festival and a rich chestnut dessert that fully captures the charm of autumn.

Wine by the Glass Fair

Like Japan, Italy stretches from north to south, and its diverse climate and landscapes
nurture a wealth of grape varieties, giving rise to distinctive wines unique to each region.
To commemorate the 160th anniversary of diplomatic relations between Japan and Italy,
we present this special fair in three editions, inviting you to explore the profound
and captivating world of Italian wine. Embark on a journey across the length of Italy,
guided by wines meticulously selected by our sommelier.

Phase 1:

The Brilliance of Southern Italy

Wines from Southern Italy, a warm resort region, are the perfect companion for summer. We selected exceptional wines that offer refreshing flavors with subtly exotic nuances.

Phase 2:
Friday, September 4 – Sunday, October 11, 2026

The Craftsmanship of Central Italy

Featuring renowned wines from Tuscany, one of Italy's foremost wine-producing regions, this selection showcases time-honored craftsmanship. Savor flavors ideally suited to the early autumn season.

Tradition and Refinement in Northern Italy

Indulge in the rich, cool-climate wines of Northern Italy, including the legendary Barolo. We prepared a selection of refined, full-bodied wines that pair magnificently with late-autumn delicacies such as game and truffles.

Italian wines with richness born of fermentation, and sushi harnessing vinegar, one of Japan's traditional fermented foods, come together in an exquisite pairing themed on beauty and fermentation.
Begin with a sparkling wine of opulent complexity, achieved through secondary fermentation in the bottle, alongside white fish. Continue with a crisp white wine of pristine minerality, matched with vinegared seafood and shellfish. Conclude with a silken, sensual red wine harmonizing with tuna and anago (conger eel). Relish the interplay of five meticulously selected Italian wines and Miyuki's signature sushi.

To commemorate the 160th anniversary of diplomatic relations, a special dish inspired by traditional Japanese Shigitaki (simmered eggplant) has been reimagined with Italian flavors as part of the teppanyaki course at Miyuki.
The Shigitaki, wrapped in a transparent film and warmed on the teppan, is finished with aromatic grilled cheese and semi-dried tomatoes, elevating it to a richer, more refined creation. We invite you to savor this limited-time dish where the traditions of Hotel Chinzanso Tokyo and the flavors of Italy converge.

Enjoy a delightful collaboration of Japanese and Italian flavors through a pairing of whisky and Gianduja, the signature chocolate of historic Italian chocolate maker Caffarel. The selection includes two varieties of Caffarel's Gianduja and a chocolate-coated Japanese Iyokan citrus peel. Choose Yoichi, Ao, or Luce Grappa whisky to complete the pairing.
