To deliver dishes that satiate all five senses, we obsess over aroma, taste, color, texture, and temperature. We are also very particular about the warmth of the plates you touch, the table setting and presentation, and many other details.
Our menu evolves daily to reflect the everchanging seasons. Even the fish we use to make our broth changes, from Japanese Spanish mackerel in the spring to tuna in the summer. In this way, we take full advantage of nature’s bounty and flavors of ingredients that shift with the seasons.
The wedding menus offered by Hotel Chinzanso Tokyo feature creative French cuisine that can be eaten with chopsticks. The dishes are lovingly designed to be enjoyed by guests of all ages.

A future visible through creativity
For many years, we have accompanied countless guests in their wedding celebrations. While French cuisine was once the standard choice for elegant weddings, demand for Japanese cuisine has grown with the current trend of Japanese-style weddings. Our recently completed THE TOKYO CUISINE restaurant was established based on our commitment to cherish and preserve the techniques of the hotel, as well as to continue evolving to cater to the everchanging tastes of the times. This attitude is part and parcel of our tradition.
Mr. Judai joined Chinzanso (now Hotel Chinzanso Tokyo) in 1986. Since then, he has constantly honed his skills, traveling between East and West, cooking for weddings and banquets, and working at the external restaurant Chinzanso Yaesu, the French restaurant Camellia, and the Kyoto International Hotel. In 2015, he was appointed head chef for banquets at Hotel Chinzanso Tokyo and in 2024, he was concurrently appointed executive chef of Fujita Kanko Inc. and the head chef of Hotel Chinzanso Tokyo. That same year, he was named Knight of the Order of Agricultural Merit (French: Chevalier de l’Ordre du Mérite Agricole) by the Republic of France. He is renowned for his elegant French cuisine with a modern twist.
