The Bistro chef Koji Ueda
Our fun and delicious dishes, freely made using French techniques, can be enjoyed by guests of all ages. Enjoy a variety of cuisine, from light meals to full courses, in a relaxed open space.
He gained experience at a hotel in Tokyo, lived in France for over 2 years, then returned to Japan to work for 2 years at Restaurant Taillevent Robuchon. In 2004, he started working at Hotel Chinzanso Tokyo. Later, he trained for a year at a three-star restaurant in Four Seasons Hotel George V, Paris, and luxurious Hotel du Palais in Biarritz in the south-western Basque region of France to refine his skills and sensitivities. In 2013, he became head chef at Hotel Chinzanso Tokyo's The Bistro.
