Message
I was raised on my grandmother’s lovingly cooked meals, and from an early age I felt that a dish made with all one's heart touches the heart more deeply. In Japan, which has become my second home, I stay true to my roots and the path I have walked, and strive to present dishes that bridge tradition and innovation.
Profile
Forcolin Alberto
Originally from Treviso in Italy’s Veneto region. He honed his skills at the five star Hotel
Danieli in Venice, and later moved to Australia. He first came to Japan in 2009 and further grew
under Chef Enrico Derflingher. Who served as Executive Chef for the British Royal Household. He later joined Hotel Chinzanso
Tokyo. After a period abroad he returned to Japan and, from 2022, took charge of Il Teatro, the main
restaurant at Hotel Chinzanso Tokyo.
In March 2026 he was appointed as Executive Chef at Il Teatro.
